Simple Snack - Toasted Coconut Flakes

Fat tends to get a bad rap, especially the good fats like tallow, lard and coconut.  Coconut oil and other coconut products are a huge part of our diets and the fats they give have provided great nourishment for both Kevin and Rylan.

One of Ry's favorite snacks is toasted coconut flakes and they are so simple to make and stash in my purse.

Toasted Coconut Flakes

2-3 cups coconut flakes
sea salt to taste

Spread the flakes on a baking sheet.  Sprinkle with some sea salt and bake at 325 F for 5- 10 minutes.  Be sure to watch them closely.

You can also add other flavours like cinnamon or cocoa powder.
