Cabbage Rolls

Kevin started the GAPS diet just after Christmas.  In sheer desperation to get more health and add more foods to his diet he finely agreed GAPS was the way to go.  The diet is designed to heal the gut and reintroduce the good bacteria needed for gut health.  His progress has been slower then we thought but there still is progress.

A month ago we had a wedding to attend and he really wanted food that looked like everyone else's meal so I decided to make GAPS compliant cabbage rolls.  They would look like a regular meal and still be easy on his gut.  There is not a huge difference between them and regular cabbage rolls.  The biggest difference is that I had to cook the ground beef slowly in the slow cooker for hours before putting it into the cabbage.

Cabbage Rolls

1 head of cabbage blanched
1 pack of ground beef cooked
salt and pepper to taste
2-3 leeks chopped

Mix the spices with the cooked beef.  Once the cabbage leaves have cooled down fill with the beef mixture and roll up.  Place in a casserole dish with the seam side down.  Once the dish is filled top with the chopped leeks and fill with some water.  Cover the casserole dish with foil and bake for about 45 min to an hour at 375 F.  Eat right away or freeze in smaller portions for easy eating.
