Chicken Pot Pie

Chicken pot pie is such a classic and such a favourite of mine.  One day I bought one at the deli and Bray ate most of it.  So after that I knew that I needed to learn to make it myself so we could enjoy it as a family.  This is the ultimate comfort dinner and perfect for those cool fall nights.

Chicken Pot Pie

1 homemade pie crust (see blog for recipe)
2 cups chopped chicken, cooked
1 cup carrots chopped
1 cup peas
2 cups chopped potatoes
1/2 cup chopped onions
1/3 cup butter
1 tsp salt
1 tsp pepper
1 tsp garlic powder
1/4 cup flour
1/2 cup broth
1/2 cup milk

Put the chicken, carrots, peas and potatoes in a pot and cook for about 8 minutes.  Place this in a casserole dish.  In the pot add the butter and onions and cook for a minute and add the spices and flour.  Slowly add the broth and the milk and simmer until it thickens.  Pour over the veggies and top with the pie crust.  Bake at 425 F for 30 minutes.
