Chicken Pot Pie

Chicken pot pie is such a classic and such a favourite of mine.  One day I bought one at the deli and Bray ate most of it.  So after that I knew that I needed to learn to make it myself so we could enjoy it as a family.  This is the ultimate comfort dinner and perfect for those cool fall nights.

Chicken Pot Pie

1 homemade pie crust (see blog for recipe)
2 cups chopped chicken, cooked
1 cup carrots chopped
1 cup peas
2 cups chopped potatoes
1/2 cup chopped onions
1/3 cup butter
1 tsp salt
1 tsp pepper
1 tsp garlic powder
1/4 cup flour
1/2 cup broth
1/2 cup milk

Put the chicken, carrots, peas and potatoes in a pot and cook for about 8 minutes.  Place this in a casserole dish.  In the pot add the butter and onions and cook for a minute and add the spices and flour.  Slowly add the broth and the milk and simmer until it thickens.  Pour over the veggies and top with the pie crust.  Bake at 425 F for 30 minutes.


Mexican Rice Bake and Enchilada Sauce

As the summer starts to draw to a close we are trying to get back into a routine and that means good solid dinners every night (I kind of take the summer off and we eat a lot of sandwiches, veggies and breakfast for dinner).  I also want to find dinners that are easy to make and easy to freeze the leftovers for those busy nights.

This rice bake was a hit and had just the right amount of spice to it.  There was none left to freeze in this case but I will for sure make it again.

Mexican Rice Bake

2 chicken breasts cooked and chopped
1 cup dry rice, cooked
1 cup black beans, cooked
1 cup shredded cheese
1/2 a pepper chopped
3/4 cup enchilada sauce

Mix together the chicken, rice, beans and sauce.  Press into a casserole dish, top with the peppers and then the cheese.  Bake at 350 F for 25 minutes.



Enchilada Sauce

3 tbsp. olive oil
2 tbsp. spelt flour
1 tbsp. chili powder
1 tbsp. cumin
1 tbsp. garlic powder
1 tbsp. onion powder
1/2 cup homemade tomato sauce

Mix together and then use.

Natures Stones

When your world gets turned upside down with allergies and other issues you start to search for things to help that are more from the Earth instead of a factory.  I have been slowly learning more about crystals and gemstones and how we can use them in our daily lives to help.  I have to say I was skeptical at first but we have been seeing it first hand and we are now believers.  Here is what we use so far in our house and I can assure my collection will be growing.

1) Salt Lamp - we have one in our bedroom and I turn it on during the day and we have noticed that we both sleep better when we do.

2) Rylan - he wears a hematite bracelet to help ground him and sleeps with calcite under his pillow.  We have noticed that the hematite helps Ry get to sleep faster and the calcite keeps him sleeping all night which are two things we have struggled with because of his sensory disorder.

3) Brayden - he wears tigers eye on a bracelet to help with his negativity and self worth.  He seems happier when he wears it.

4) Kevin - he wears a bracelet with hematite and obsidian. 

5) Me - I wear an amethyst bracelet and since starting to wear it my insomnia is gone.

There are so many crystals out there that there is always something for everyone.
