Waffle Cones and Banana Ice Cream

Just before Christmas one of Ry's craft projects at school was decorating waffle cones to look like Christmas trees.  This one stumped for a bit on how he could participate until I googled waffle cone makers and realized I could buy one.

When it came in I starting playing around with batters and finally made one that yielded perfect waffle cones that tasted like the store bought ones.  I had one very excited little boy on my hands since he has never had a waffle cone let alone an ice cream cone before.  After making the cones I whipped up some banana ice cream and he got to enjoy something that was an amazing first for him.

Waffle Cones

3 eggs
3/4 cup sugar
2 tbsp. vanilla
1/2 cup butter
1 tsp baking powder
1 cup flour

Mix all the ingredients well.  Place a heaping tbsp. full on the waffle cone maker and use the tool to wrap up as a cone.  To make waffle bowls wrap around the bottom of a cup or jar.



Banana Ice Cream

3 frozen bananas
1/4 cup sugar
1/4 cup cocoa powder

Place in a food processor and mix.  Scoop into the cones and eat!!



My Newest Toy : Paderno Spiralizer

One perk of the allergies is the ability to collect a very nice amount of kitchen gadgets.  My newest addition to the collection is a spiralizer.  This is one of those gadgets that I have had a fun time playing around with and the boys are super pumped to watch me whenever I use it.

The first thing that I made was butternut squash noodles and they were a huge hit  It was the first time Ry had the squash he loved it.

After spiralizing the squash put it all on a greased sheet and sprinkle with salt and pepper.  Bake at 400 F until they start to get soft

The other vegetable we tried was sweet potatoes.  We made fries.  Instead of baking them I deep fried them in coconut oil.  I have never seen my boys eat so fast.  We also did the same with potatoes.




Chickpea Blender Brownies

Allergies can limit your world so much at times that you tend to get creative.  One of our safe foods is chickpeas and I am blown away by all the things that you can do with them.  I make Ry a chickpea cookie dough that tastes like the real thing so I figured to keep trying new things.

These brownies are flour free, taste like brownies and so easy to make.  The boys loved them.

Chickpea Blender Brownies

2 cups chickpeas ( I soak and then cook dried ones but canned ones will work)
2 eggs
1/2 cup raw cacao powder
2/3 cup sugar (coconut sugar works well)
2 tbsp. milk
2 tbsp. vanilla
2 tsp baking powder

Put all of the ingredients into the vitamix and blend until smooth.  Pour into a parchment lined baking pan.  You can top with chocolate chips if you want.  Bake at 350 F for 25 minutes for thinner brownies and 45 minutes for thicker ones.  Let cool and then cut.
